Panamanian Chef Mario Castrellon helped create this goldilocks sauce with the perfect harmony of fruity habaneros and sweet, herbal undertones of the cáscara (the husk of the coffee cherry). The fruity heat of the habaneros lingers just long enough to awake the palate. Enjoy on everything from morning eggs, to enchiladas to a cut of Wagyu.
