For those familiar with Catina Royal’s Tamaulipeka hot sauce from Hot Ones Season 11, Tomasa is similarly rich but has a darker hue that hints at its intense flavor. The sauce gets its inky color from earthy roasted manzano chiles, which are highlighted by a strong hit of garlic (super strong!) and the sauce’s silky corn oil base. Smokey and savory, Tomasa brings out the umami in everything from tacos to pizza to dumplings.
